Long haul APD is likely to be around £300 each, not ideal but at least something

APD for an economy flight over over 6,000km is £94 each (and double for business class)
Airlines tend to lump in things like fuel surcharge into "taxes and fees" and these are not refundable

Yes, we booked it in store in the hope that we would receive a more personal customer service than we would from the faceless Internet agents. Sadly not.
They won't change Both travellers details so it seems we can't sell the holiday on, and they will not change the dates. They simply refer to their terms and conditions. My partner is due to speak to the UK sales manager and I'm hoping he will be able to offer usd a little compassion.

I don't think that's correct, if 1 name can be changed then both should be as long as the lead passenger deals with it, if they said none could be changed then obviously the flights are non refundable non changeable, I would persue the name change issue. If its close to travel then they won't let you change the dates as they maybe unable to resell the holiday and would make a loss on it so I can understand that.
