Meal Plan W/B 16th September

            Late to this, this week ....
 Freezer
 Monday was [STRIKE]LMc sausages[/STRIKE], [STRIKE]mash[/STRIKE], [STRIKE]green beans [/STRIKE]and carrots
 Last night was [STRIKE]Butterbean and Lentil stew [/STRIKE](this was delicious!!!) with the [STRIKE][STRIKE]leftover sausages[/STRIKE][/STRIKE]
 Tonight is [STRIKE]white fish, mushy peas[/STRIKE] and [STRIKE]chips[/STRIKE] or Thai salmon fishcakes
 Thursday: Jamaican sweet potato curry with rice and gungo peas
 Friday: Mexican Quorn mince, Spanish omelette and green beans (still not made this !!!) - DONE served with veggie mexican tapas. The mince itself was lovely as was the omelette!
 Saturday: Sweet and spicy prawns/Gumbo

 Thu - Aubergine Curry
 Fri - Cottage Pie
 Sat - Chicken, aubergine & pepper red thai curry
 Sun - Sausage pasta bake
 Mon - Steak & Ale pie, potatoes & veg
 Tues - ham & mushroom pesto pasta
 Weds - Pork chops, stuffing, roasties, veg & gravy
 Thurs - Chili con carne
 **All will be homemade, except for cheat's jar of red thai curry paste & pesto :-) **
 ** Breakfasts will be cereal, and perhaps bacon sandwich over the weekend, lunches will be HM leek & potato soup, ham sandwiches, egg on toast or falafel & hummous wraps. Snacks will be low fat crisps, yogurts or fruit**Cat :wave:0

 Here you go natbags ... (credit to RikkiC of grocery challenge for this):
 Ingredients:
 1 Onion
 1 Medium carrot
 2 Cloves of garlic
 1 Medium potato
 1 Medium tomato
 1 cup of red lentils
 1 tin of butter beans
 2 tbsp Olive Oil
 1 tbsp Tomato Puree
 1 tbsp Paprika
 1 tsp Allspice, Ground Coriander, Parsley, sugar/honey
 1/2 tsp chilli flakes, tarragon, rosemary, sea salt
 2 chicken/veg stock cube
 Dash of lemon juice
 water to cover
 Finely dice all vegetables, chop tomato into large chunks
 Fry onion and carrot in olive oil in a saucepan, on low heat, with a tight fitting lid for 15-20 minutes
 Add all other ingredients besides water, to a casserole dish or into the same pan as the onions and carrots if you used a big pan anyway.
 Stir paprika into onion and carrot mixture, add to casserole
 Add water to just cover everything
 Cook at 170 C for 1 hour and 20 minutes, stirring occasionally or on the hob simmering for 40 minutes.
 Add extra water if casserole is dry and serve with rice
