Was made redundand with no pay help needed!

Hi everyone I need some help to resolve my redundancy issue,

I have been working as a part time chef for 4 years. When I was on holidays, I found out, that I have no job to go back to, as my department being closed. So I went to see the owner of the business to ask if I was made redundant. He just said that business is struggling and he has to close the kitchen so there is no job for me and there are no money for redundancy either. I have received my P45. The business is still operating as a Bar and night Club but no money for redundancy.
I have contacted ACAS, they say I have to write an appeal letter to the owner of the business and give him 6 days to reply. If within 6 days we don't get an agreement with the owner only then ACAS can give me help I need.
So the help I need now is an appeal letter.
How do I put this on the paper. I only want my redundancy pay, that's all I need.
I would really appreciate If anyone could help.

don't forget notice pay an unused holiday pay.

Yes I know. If I am not mistaken - He should pay me unused holidays, 3 weeks notice and 3 weeks redundancy pay as I was made redundant coming to the end of my fourth year.

I just need to send him a letter explaining him that he needs to pay.
Just don't know how to put this on the paper as an appeal letter.
