Adding a bidder ... to overcome 'no intenational bids' rule

I am selling an item and initially restricted the item to UK bidders only.
Two folk, one in America as well as somebody else in Australia have asked if I can post there too. As I have obtained postal rates for both countries, I want to be able to say 'yes' to them only.
I know there is a way to allow certain bidders to bid, even if there is an 'overall restriction' on foreign bidders ... but I've forgotten how.
Any advice would be appreciated.
