Mash - Food processor with olive oil, into an icecube tray - chive pesto
Stick - freeze "on the stem" - intiially carefully long & straight (I lay then on a baking tray on greaseproof paper, then repack into bundles (plastic bags, wrap tight as possible) & pull out as many or as few as you want.
Log - m'sister deliberately freezes her in a log/bundle (helped with water) and chops slices off as and when.
Hope this helps with chives.
Almost any herb can be frozen in olive oil in ice cube trays, just label vigorously!0 -

I would think that they'd behave in the same way as spring onions...
I snip them into small pieces with scissors and keep them in a plastic container in the freezer, just adding a handful to soup etc as needed. (Although due to the water content I think that they'd go too soft for salads etc.)The beautiful thing about learning is nobody can take it away from you.
