Deleting emails from gmail All Mail

So I like to keep my email tidy and delete emails not required. So to tidy up a bit more I select all the messages in my bin and delete and it appears empty.
I then go to All Mail and find their still there. In fact, this file tells me I have over 15,000 emails and its clear that a lot of this is the email trash, spam etc a lot of it unread which I think I've deleted.
Am I doing something wrong - how can I get rid of it?
I do use an IMAP client (Zimbra) but am going to the web/online version of gmail to do my deleting/tidying up.

Thanks and yes I googled the same but it doesn't help me.
I'm going direct to gmail via the web and not my IMAP but still can't seem to delete from All Mail

I deleted one from "all mail" It went to the bin and had to be deleted again from there.0

Think "all mail" Includes the recycle bin (as well as sent messages and archived mail)
As long as they don't show up in "inbox" they are permanently deleted after 30 days.
Think you have to select "Delete Forever" to bypass the recycle binLaters
