repolish existing granite worktop

We finally decided that we couldn't afford a new kitchen right now, so are sprucing up the old one with colour, new appliances, sanded floor, new splashback etc.
The area of London we are in has high limescale and the existing granite worktop is marked, especially around the tap/sink area.
Our carpenter told us there are companies who come in and repolish the existing granite on site.
How effective is this and does it throw off so much dust that the kitchen walls and units are affected?
Does anyone have any recommendations? We are SE London area.
Do you have to remove the hob/sink/tap while it's done?
