New iphone new network

Hi I've bought an iPhone 5 and changed network to Tesco Mobile so I have a new number. My old iphone 4 is with EE and I'm not keeping the old number so when I set up the new iphone do I set it up as a new iphone or restore from iTunes backup? I would just like to transfer everything from my old iphone but I wasn't sure if I could do this as I'm now with a new network and have a new phone number.

Your new number on the Tesco network is related to the SIM that is installed into the handset and does not affect the data e.g. your contacts, apps, photos etc. brought across from your backup.
