I cooked mine about gas mark 5/6 and after 40 minutes mine was like yours Esther but nicely brown on the top. I put foil on the top, turned it up to 6 and let it go on for another 10/15 minutes then tried it again and it was fine.
It took less time for us all to eat it than it did to cook it!
I only made it to use up a jar of of lemon curd that was going out of date. Now i have to go out and buy another jar to make another cake it was that lovely0 -

The recipes is
100g marg
75g. Sugar
2. Eggs
175g. SR flour
1 Jar of lemon curd
Heat oven to 180. Grease and line loaf tin
Mix all ingredients
Pour mixture into 2lb loaf tin
Bake approx 40 mins till brown.
I made this for our works MacMillan coffee morning today and won third prize in the bake off. Over the moon as only made it because I had a jar of lemon curd to use up!
Needed an hours baking (had to cover with foil to prevent burning) but the texture was lovely.
