Ariston fridge/freezer too cold/replacing thermostat

Hi
Just wondering if anyone can help.
I have an Ariston OK-RF3100 fridge freezer, approx 12 years old. The fridge is freezing my food. Have turned the thermostat but it doesn't seem to make any difference, if anything it just gets even colder. I've had a look at replacement thermostats (if that is what the problem is), and they are about £20 but I have no idea how to go about replacing it. Do you think the problem is the thermostat, and does anyone know how to replace one DIY style?
