Seriously?! Who checks their spare wheel before leaving a car park after a holiday. It would be the last thing on your mind.
Same thing happened to me at a garage when I had an mot done. Unfortunately there is no real way to prove anything unless there is cctv available. I just chalked it up to life.0 -

Have you reported to the police? I suspect that unless there is cctv footage of it being pinched there will be very little you can do. I bet they have signage up all over the car park saying vehicles and their contents are left at the owners risk0 -
Some cars (e.g. Landrovers) have the spare external to the vehicle, so easily spotted if it is missing.0

When you return to your vehicle and open the boot to put your suitcases in and find bits of metal, bolts and a piece of sheared steel rope on the floor behind your car, i think this warrants a little investigation. Thanks for your comments.0 -

(i) The Airport does not accept liability for:- damage to your vehicle (whether caused accidentally or by way of vandalism);
- theft of, or from, your vehicle while the vehicle is in the car park, unless such damage or theft is caused by the negligence of the Airport or its agents or employees, and then only to the extent that the Airport’s negligence has caused or contributed to the relevant damage or theft.
- any damage to or theft from your vehicle that occurred during your stay must be reported to a member of staff before exiting the car park.

Absolutely disgusting. However, the worst story I heard was someone who came back to find that their brand-new engine had been replaced with a lower spec one. You can't prove who did it so the police can't get very far with an investigation.0
