Radiator fan question

I recently had a new engine temperature sensor fitted because the over temperature warning light was coming on incorrectly (i.e. when it wasn't overheating).
However I'm not sure the radiator fan is coming on now, if I were to start the car and leave it idling, how long approx. should it take for the fan to come on?
I noticed when I was in a queue on the motorway following a good run, that the fan never came on despite sitting still for a few minutes in the hot temperatures of late!
Additionally when I start the car should the over temperature warning light come on and go off? (in the same way the oil and engine warning lights do)
Car is a 2002 Peugeot 106 petrol

Fan should "kick in" at around 90 degree's C.“I may not agree with you, but I will defend to the death your right to make an a** of yourself.”

you should leave it on idle for a good 10/15 minutes to heat up. I just changed the temp sensor on my Astra before I sold it and it took about that long to get up to a temp where the fan cut in.0
