First Time Buyer - HELP NEEDED :)

My partner and I have saved up a deposit of £35k, are both employed and plan to buy a house in the region of £175-£180k. We have been looking for houses but at present there isn't anything on the market for us. We thought that it might be a good idea to go and see a bank to put in an application for a mortgage in principle so that at least if anything was to come up we would have already done most of the leg work in terms of finding a mortgage.

My credit score is 999 and I've never missed a payment on anything, my partner's is in the 800's as he defaulted on a couple of accounts 3-5 years ago but has a clean track record in the last 3 years and his score has dramtically improved over the last few years. Does anyone know if the mainstream lenders i.e. natwest, halifax etc will consider us for a mortgage in light of this? Also, do all lenders ask to see bank statements or are there any who just accept payslips? I'd also like to know if it's a bad thing to run 2 applications with 2 different banks at the same time?

I'd be so grateful if someone could help me.
