Hi there
With the summer holidays upon us I will be asked every 15 minutes for something to eat by my very hungry children!!! Can anyone give me some ideas, I usually offer them fruit, yogurts, a biscuit, flapjacks, popcorn etc I try & keep things reasonably healthy but there is a limit to how many pieces of fruit they can eat & my budget is very tight !!

Carrot sticks - just peel and chop up some carrots into bits about 2" long and 1/2" wide, then give them something to dip them into like cream cheese, hummus etc.
Also, you could try something I've invented, a sort of poor man's icecream. You mix some juicy fruit like blackberries with some kefir (watered down a bit if you like) and some sugar or xilit (natural sweetener). Mix it all up and it's like a sort of healthy icecream.'Never keep up with Joneses. Drag them down to your level. It's cheaper.' Quentin Crisp0 -
Frozen bananas whipped in a blender with some cocoa powder and a spoon of smooth peanut butter makes a cheap healthy alternative to icecream.
Frozen black grapes (seedless) and frozen watermelon chunks make great snacks in hot weather and take much longer to eat than fresh so they last longer.0 -

What about banana cupcakes?
This makes about 12:
100g Sugar (any sugar - I have done caster, granulated & brown and all good)
100g SR Flour
100g Butter/marg
2 eggs
2 bananas, mashed
4tbs milk
anything else you want to chuck in - walnuts, sultanas and choc chips have all been tried and are tasty, usually just chuck 1 or 2 handfuls in of whatever I have.
Cream sugar and butter,
Mix in beaten eggs
Mix in Bananas
fold in flour
add milk
fold in whatever else you are adding.
Fill cupcake cases approx 2 thirds full.
Bake at 170 degrees for 20-25 mins.
They keep well for a good few days/week at a push because banana keeps them gooey and moist. (altho they rarely last long in my house as they are very moreish) They also freeze great.
Also, flapjacks are great, cheap and you can add any fruit you fancy, or nuts and not to unhealthy (I dont use sugar, just use a couple of spoons of golden syrup, butter and oats with whatever fruit I have - find if I put extra sugar in it makes it too sweet)Mum of 2 monkey. 4 yrs and 2 yrs :j
