Does any on have any (simple) recipes or suggestions how I could bake healthier cakes and treats?
I will be making them for my son so not really after low fat versions just less refined sugar or something that uses wholemeal flour etc.

We use the Annabel Karmel recipe for pineapple and carrot muffins in my cooking class. While testing it I found that the amount of sugar was far too high so halved it; it was still too sweet so now we leave it out entirely! There's plenty of sweetness from the carrots, pineapple and raisins.
You could tweak the ratio of wholemeal to white flour too, or replace some of the white flour with ground almonds. They freeze well too; I put one straight from the freezer into the lunchbox and it's defrosted by noon.They call me Dr Worm... I'm interested in things; I'm not a real doctor but I am a real worm.0 -
Use things like banana and dates to sweeten instead of sugar. The simplest recipe I've seen for cookies uses just mashed banana and oats, can add in whatever else you like, nuts or dried fruit, bake for about 15mins.
Have made these flapjacks before:
Ingredients
2-3 small bananas (sliced)
1 cup dates (chopped) (170g)
2 cups oats (180g)
80ml vegetable oil
1 tsp vanilla essence.Method
1. Mash the bananas in a large bowl.
2. Add the dates and oil to the bananas and mix together.
3. Stir in the oats and the vanilla essence and
leave for 5 mins, so the oats absorb the oil.
4. Spoon the mixture into a well greased baking tray and bake at 175C or gas mark 5 for about 25 minutes.
5. Serve.0
