Fridge freezer after a kitchen flood

Advice needed please, a few weeks ago I had a flood in my kitchen water can through ceiling and all down the back of my fridge freezer. Ever since it hasn't worked properly and fast freeze is constantly on yet freezer isnt cold enough.
Insurance company sent out engineer to assess fridge freezer and two other items he was in my house less than five minutes and only took the serial numbers. He has now sent in a report saying that it just needs to be turned off and defrosted then it will work there is just a build up of gases. He never said this and I had already defrosted it. He also clams he spent over 50 mins doing these checks! I now have to wait over a week to have another engineer out because I am at work all day. During the visit no paper work is given so he can write anything he wants after the visit even the insurance company has said that no paper work will be given.
Has anyone any ideas of what I can do so I can prove what actually happens on the visit. I have thought of a video camera.

Just document it, writing down time arrived etc.. and what was done. Let the engineer know what you're doing.Should've = Should HAVE (not 'of')
