1st floor/roof rebuild

Hi All,
Myself and my wife are about to offer on a 4/5 bed detached house in West London circa 2000sqft. The house requires lots of rework and remodelling most of which is fairly standard refurbishment which have done before on our current property and we're confident is manageable by a 'regular' builder.
However one issue presents itself which I haven't a clue about - the roof. The entire 1st floor has low ceilings AND furthermore every room has sloping ceilings. We'd like to raise the height of the entire 1st floor structural internal and external walls (and therefore heighten the ceilings) achieving higher and flat ceilings.
Questions:
1. What is the feasibility of doing this and has anyone done this before?
2. How much would it cost (rough ball park would suffice)?
3. Can a standard roofing contractor do this or would we require a a full-on building company considering its a new roof plus raising the 1st floor structure?
I would REALLY appreciate any advice, experience and expertise anyone has to offer!
Thanks in advance!!!

The edges probably slope because the roofline is below the top of the internal walls. This house is like that:

notice where the slope of the hips changes. Thats the level of the ceilings on the first floor which then slope down to the walls to follow the slope of the roof.
Change it and you'll ruin the look of the property IMO so:
1. You're nuts.
