My 2.5 year old son has decided he is a girl. When you say he is a good little boy, he replies "No, I'm a girl". His favourite colour is pink. He likes to play with toy kitchens and dolls.
So do we book him to see a child psychologist to change his mind, or a gender reassignment surgeon to turn him into a girl?

Or you just let him carry on. He's only 2 1/2. I'm sure it's just a phase or he's seen something on TV or somewhere.

At my partners school one of the boys in reception pretended he was pregnant for a few hours this week by stuffing a doll up his shirt because his mum gave birth during the weekend.

No, I wouldn't rush into getting your son checked over just yet!
On the off chance you are really being serious here I will offer you some advice. There is nothing unusual about boys playing with what society labels as being 'girls toys'. He is just at that age where everything around him fascinates and intrigues him. Be happy that he is an inquisitive little boy who wants to enjoy and play with all manner of things. He isn't restricting himself by just playing with cars, trucks, trains etc. This is a good sign of a child who has a bright and enquiring mind.
I am a teacher and lots of the boys in my class like red/pink as a colour. Such young children aren't inhibited in their thinking or on deciding their preferences. This should be whole heartedly encouraged not viewed as a problem, or have any weight given to this being any indication that you need to be worried. When your son refers to himself as a girl he is playing on your reactions to what he says. Don't show any concern or waste any more time over thinking all this.
There could of course be another explanation. When I was little my mum use to say to me whilst correcting me for a misdemeanour 'When you grow up a little, you will be more like Simon'. He was a little boy of a good neighbour of ours a few doors down. I turned to my mum one day when I was around 5 and asked her outright, when would it be that I was going to become a boy. References to being like Simon stopped instantly oddly enough
