EH - bless you for thinking of me when you've so much on your plate. I hope your hols are BRILLWell, as it happens, L*dl cukes are 45p at the mo, however, we also have one of those freezer discounter centre type shops in the same precinct and their cukes are 39p. I sorted through the box and I have to say, with no hint of smugness or swagger, that I picked a *whopper* [technical term] that came in at 17" :j:rotfl::money: And yes Dear Reader, I DID get the tape measure out (not in the shop, mind
), because I know that you know that these things are important :money::j
Well, today has been brill. We've had wall to wall sunshineLuckily with a nice breeze to keep things cooler.
I spent dosh, so can't claim a NSD - will have to rein myself in though, I have spent every day this week :eek:
The weather was spot on for salad, so we had one off the planner. We had sweetcorn and chilli fritters, mixed leaves, minted potato salad, tomato and red onion salad, sliced cucumber and beetroot, walnut and caraway salad. Pic here;
The fritters were actually an 'eggless' recipe - which you can find HERE (she is better at getting *puffy* pancakes than me- I'll admit to adding too much water
), however, as they were a main component of the meal, I made mine with gram (chickpea) flour to incorporate a protein element into the meal in the absence of eggs. It also gives the fritters a much deeper yellow colour. I am slightly annoyed that the seetcorn got all camera shy and hid in the pancakes so that you can't really tell what they are
Quite a frugal meal again. Obviously I bought the salad leaves, rocket and cucumber today, but my investment of £1.93 will be used over several meals. And whilst I was itching to chop up some black olives to add in with the tomatoes and red onions, it would just have ramped up the cost of the meal, without significantly adding to nutrition or flavour. Flavour was there in spades anyway. Must remember to add a 'salad eaten' to my siggie figgie
Today I am grateful for these 3 things;
for the beautiful sunshine - made everything seem *better* I think
for wonderful, cheerful customer service via e-mail - the person helped me, even though technically it wasn't their remit :j
for kind people in my life who have my best interests at heart - Thank you

Today I am grateful that I had the time to spend with mum, and the flexibility to be able to stay overnight so that tomorrow I can take back the net curtains we bought for her but the eejit at the shop cut far less than the windows need.
I am grateful for the excellent customer service given when I rang to complain.
I am (mostly) grateful for the aerobic exercise involved in taking the old nets down, cleaning the (large) windows, putting the new nets up, taking them down again and rehanging the old nets.
I am grateful for the yummy chocolates mum and I have just shared, courtesy of a lovely niece.What would you get if all you got was what you were thankful for?0 -

The best thing I can say about today's weather - that it was bouncing off the pavements.
At least it was downward and not sideways as per usual as I'd fear it might have knocked small animals and children over with its ferocity.

Hey Tilly - lovely to see ya. I was thinking of you last night. I had a look on amor-zon to see what cook books are going to be released in 2014 - looks like there are some good ones coming upVery surprised that vegan cookbooks seem to be a trend this year. Not surprised that they are re-issuing nigella though - the Summer cookbook (currently on f00d n3twork repeating the series) and her 'how to cook' - which is one I have recently given away to charity
Shock, horror - I am going to aim for a NSD today
I'm not too sure what we will be having for dinner this evening - as the weather has changed again, but there appears to be a surfeit of salads to munch our way through
I am starting to look at the menu planner for June. How to eat really healthily and 'lightly' for next to nought will be the challenge I think
