8" Springform tin - Help needed!

Hi, keeping in with OS, I am embracing baking. The problem I'm having is that every recipe I look at requires a different size tin, and I can't afford to buy them all. I have an 8" (20cm) springform tin, and I can't find any cake recipes for that size!! I'd love to do a coconut, chocolate or fruit cake. Can I use any recipe and hope for the best, or do you lovely people have any that you will share with me?

    Hi there
    a basic sponge mix for an 8" round tin would be:-
    8 oz butter
    8 oz sugar
    4 eggs
    8 oz sr flour
    So if any recipes have similar quantities you should be ok...
    For a choc one use the above recipe..but swap 1 oz of flour for 1 oz of cocoa
    for coconut i would keep the basic recipe but add about 2oz coconut... you may need to add a drop of milk to the recipes if you find it a bit stiff... you could also try washing a couple of ounces of glace cherries and then dry them off and chop them up, dust with a bit of flour (should stop them sinking) this is nice in the coconut!!!! cake...mmmm you have me started now...

    You are welcome...let me know how they go..and if you want any more..give me a yell.. i qualified as a chef when i was 17...not that i do it as a job but..as a result i have far too many cookery books n magazines for my own good LOL...so if i dont know a recipe off the top of my head and can probably track you one down.... have fun :-)

    I'd just like to suggest that, if/when you want to expand your collection of tins, you consider one of these. They pack flat, so take very little room, and you can make any size from 6" square up to 12" square, and also rectangles. You could bake more than one at a time depending on the shapes/sizes chosen, and you could use any recipe for a round cake by making a square one an inch smaller.

    Made the coconut sponge last night, and it turned out lovely, cut it in half and put raspberry jam and buttercream in the middle, yummy yummy, thanks again...on to the chocolate now!

    sooo glad it worked ok...sounds rather yummy with butter cream and jam :-)
    you can also do it with bashed up walnuts too....
    Please dont blame me if your waistline expands LOL
    they taste so much better than those dried out shop ones dont they...
    Dont know if you have a micro..but if you do.. heres a super quick pud...especially good if you have kids....
    throw 2oz butter 2oz sugar 2oz sr flour and 1 egg in a mixer (or whack it by hand)...pour some golden syrup or jam in the bottom of a pudding bowl drop the mix on top, cover with clingfilm and zap in the micro for about 2-3 mins and check...leave to stand a minute or so...you will know if its done... and you have a super quick sticky pud....it doesnt last well ..not that its usually a problem :-)...you can increase the amounts easily ..but watch it doesnt escape out the dish..i have done this before...its also nice with leftover mincemeat in the bottom :-)

  • OOOOOHHHHH, yum that sounds divine, have never tried to cook in a microwave before, only really use it for reheating food, or cooking a jacket potato. I'll have to give it a go when I'm in need of a sweet fix! What size bowl do you use?

    I only have a bog standard basic micro..as i only cook veg in it and defrost occasionally...but you know what its like...sunday evening..living in the middle of nowhere and "needing" something sweet....
    I have some pyrex bowls..2pts....but this will do a 4/4/4 mix too - just.. but i guess you could use anything..afterall to we ladies care what shape something is as long as its sweet :-)....just watch how mutch syrup you put in the bottom, i tends to boil up...i cheat if i want really sweet.. put some syrup in the bottom, drop half the mix on top - no need to level it or anything.... drop on some more syrup and then put the rest of the sponge mix on top LOL.... its not as nice as properly steamed...but you dont always want to wait hours do you :-)
