I did try drive the deal, but didnt get much joy out of them.
How come? The deal on DTD is currently over £3.5 off the price of the Seay Leon FR 184. Seems to be a better deal than you're currently looking at given your previous post.

Because (and Im happy to be corrected otherwise).. the deals / quotes I received were forcing you towards their own 7.9% APR, significantly worse than the 4.9% offered through SEAT.

    "Extra Information
The quoted prices include a £1,240 discount which is conditional upon you taking out PCP finance at 7.9% APR Representative over 18 to 42 months with 0% - 30% deposit arranged by the dealer. If you do not wish to take out this finance then you will need to add £1,240 to the prices that we quote. "

Also, it was unable to offer me a a range of options pricing instead forcing me to get separate quotes with / without 18" wheels or certain packs for example.

All deals quoted are the current dealership/manufacturer deals, nothing to do with DTD. The 7.9% APR deal is the standard Seat PCP deal, they also include the new 4.9% deal and the 0% HP deal. Any option you can get at a dealership is usually available on the DTD site, don't forget all they do is give you a quote and then pass you on to an authorized dealership who take care of the rest.
