    I would include more fruit, grapes, strawberries perhaps apricots some cucumber and even peppers sliced up, cherry tomatoes as others have said it is very carb heavy and i know that I would be craving fruit for afters.
    I also think that two bread rolls is too much I would perhaps do 80 that way you will account for those who do want 2 or even 3 but at the same time most people would have one or with the other things on offer may not go for any bread.

    If the rolls are pre-filled, then people (well, my family!) would want to take one of each. If they're plain, that's less of an issue.

    We chose watermelon purely because we saw some and thought -ooh, waterlemon yum! and also that it is a fruit that isn't going to get squashed or bruised in transit!

    I think more fruit sounds like a good idea - will add that to the list and also chicken pieces. Then knock off some of the carby stuff.

    If you're feeling lazy I think that places like M&S will make up sandwich platters to order - that way you'd get a nice variety without having to do all the work.
