Hi guys
Most of the recipes I have are for a 400g can of chickpeas. How many grams of dried chickpeas do I need?

Tins of chickpeas are already cooked, they should also show a dry weight on the main content of the can as well whole weight - but thats the weight of the chickpeas drained, not desiccated. If your recipe calls for one can then a standard size 400g can prob contains about 220 - 230g of chickpeas once drained. I'd expect that you want to compare that dry weight to the the weight of your chickpeas once you've soaked and cooked them.Opinion on everything, knowledge of nothing.0 -
1 can of chickpeas = 400g total weight including water, 240g drained.
250g dry chickpeas, soaked and cooked makes about 550g cooked chickpeas = 2.3 cans. Well it did when I tried it.
250 divided by 2.3 = 109g dried chickpeas to make the equivalent of a can of cooked chickpeas.
Obviously this will change depending on how much water the chickpeas take up etc, but as a rough guide you could say 110g dried chickpeas will make about the same as a can.

I soak and cook a whole 1kg bag at a time and then divide the cooked peas into 4 tubs and store in the freezer. 1 tub is more or less equal to a tin.

A couple of handfuls of dried product should do. Cooking in bulk and freezing as Puddleglum does saves hassle though.Value-for-money-for-me-puhleeze!

I cook a whole bag then freeze in a bag. When I need a tin I just weigh out 8oz. A 500g bag of any pulse gives you about 5 tins of beans.0

Does anyone have a recipe for oven baked falafel? Or tips on how to oven bake them when using a regular recipe?
I'm just loath to dig out the deep-fat-fryer, since I've never used it and have little space in which to set it up to cook. I have a very good recipe (author and name of source book escapes me) which uses soaked, ground, uncooked chickpeas mixed with spices then deep-fried. It's lovely, with the right taste and texture. I suppose I could shallow fry the falafel but that seems as much hassle as setting up the fryer.
Note - I did try, once, to oven bake them (a lifetime and several diets ago). Only memory is that they came out hard and didn't cook properly.
