Start easy thrifty,
Simmer the red currants with sugar, brown if you have it, orange zest and some port for about 20 mins. I tend not to do measurements but I would say about 10oz sugar to 1 lb of fruit. Take out zest when cool and put in clean jars and keep somewhere cool. Serve with your cheeses, cold meats or lamb. It will be more of a sauce than a jelly or jam but I think you will like it:)To do is to be. Rousseau
