Hotel reservation by e-mail in Istanbul

I am booking a hotel in Istanbul who do not have a secure site but want my credit card details including the 3 digit security no on the back of the card. They will not accept the rest of the details without those numbers as they say they have no security and have given me 2 weeks to give them or cancel. I have tried looking for other hotels but they are not as good a price for what we want. The proprietor says other people have no problem giving the details they request. I have already given him the rest of the card details by text to his mobile phone. Any advice?
