    I've stopped keeping the opened yeast packet in the fridge & that seems to make a more even rise.

    pzh and this year thanks re yeast. My Panasonic has a compartment for yeast in the top of the lift up lid, so I have to add yeast to that last, otherwise risk it going everywhere when I lift lid to add loaf tin.

    that makes sense! Mine it all goes in the baking pan together. :)

    Many thanks for the replies - I bought some new yeast yesterday, and hey presto - success. The other still had 6 months on it but I had bought it in bulk from amazon so have had in for a while - will reluctantly throw away the other boxes .... not such a bargain after all.
    I'm not a failure if I don't make it, I'm a success because I :tried!
  • always happy I too bought the "bargain yeast" from Amazon!! From memory I got twelve boxes for about £1.60 ish and ended up throwing away half :( I know I got my money's worth but I felt terrible throwing it away (even though it was no good). It felt very un-mse. With a little brown paper I turned the boxes into packages for DS and DD to play post offices with which they enjoyed.

    So glad your bread turned out well :)

    Thanks - yes, thankfully I have already hade my moneys worth from the yeast. Good idea with the boxes - my friends son LOVES boxes - he's going to think Christmas has come early!!!

    I know you've now had some success after replacing the yeast, so well done you... enjoy your bread. I posted to draw attention to a point that others have made, ensure the ingredients go in in the order listed. Particularly to keep the water separate from the yeast in the initial stage.
