Hi guys
I'm really trying to save at the minute, I'm pretty good at only buying my shopping when I need it and using a list and sticking to it.
I'm gonna try to use mostly what I have in and keep my shopping to a minimum, I've got a pretty good stock of baking things in and would love any recipies anyone can suggest ... Id like some things for kids packed lunches (cakes or biscuts) and cakes for after dinner for the kids.
Any recipies for good staples ie pastries dumplings etc would be fab to as I'm also trying to buy less processed food and make more home cooked ... I've tried a couple of recipies from online but the only nice one I've found is for Yorkshire puddings, but we are getting a bit sick of toad in the hole
My mam never really thought me any cooking skills so I've always just cheated but now I'm thinking I've got loads of baking stuff in so why not try myself

Flapjacks
Traybake (sponge cooked in a rectangular or square tin and sliced into fingers. Try lemon/chocolate/apple or plain vanilla spread with jam and sprinkled with coconut. Add custard to turn into pudding.)
Bread pudding/fruitcake.
Dumplings for stews: half fat (suet or grated cold butter) to flour, sprinkle of dried herbs, few drops cold water to bring to a dough. Shape into balls and onto top of stew for 15-20 mins.
Quiches and flans.

rock buns are easy to make and you can put anything thing in from dried fruit, choc drops, nuts!

Not strictly baking, but some dinner ideas..
How about making your own tortilla wraps? They're pretty much just flour, oil and water!
Pita breads take a little longer but still, not too many ingredients.

i have made the twinks hob nobs and added peanut butter, these were lovely. Also nice with cherries and coconut
other biscuit recipe I use was one given by JackieO, 5 ounces of butter, 5 ounces of sugar and 5 ounces of flour. you can then add whatever you want but they are nice plain.
I also regularly make a victoria sandwich cake with jam and butter cream, is good for both children and adults.
My other staples are brownies, an apple and sultana cake or a carrot cake.
I dont tend to do very much savoury baking so cant offer you much help with these recipes. I do cook from scratch every night but hardly ever make pies etc0 -
A nice cheap pasta dish if you have a rasher or two of bacon.
bacon
1/2 an onion finely chopped
half a carrot finely chopped
small piece celery if you have it
Garlic ( I use the easy garlic) about half a clove chopped finely
Tin of tomatoes
Chilli flakes as to you taste.
sprinkle of sugar/sweetner
Pasta of your choice
fry the bacon with onion, carrot and celery (I use the spray oil) with the chilli flakes for 2-3 minutes.
add the tinned tomatoes and sugar and bring it to the boil, turn it down and cook on a low heat for about 20 mins. In the mean time cook you pasta, I use about half a bag. Stir it all together and sprinkle with a bit of cheese. Lovely!
You can adjust the flavours to your taste and add herbs that you have.
Another pasta dish I use regulaly is a version of Jamie O sausage pasta.
6 sausages
4 spring onions (I have used 1 onion or even a half a leek)
1 carrot
1 stick of celery
Chilli flakes
1 bag pasta
4 cloves of garlic, crushed (I use easy garlic)
3 tablespoons balsamic vinegar
1 x 400g tin of chopped tomatoes
Whatever herbs you may have
Cook your pasta whilst preparing the sauce.
Whiz up the onions, celery and carrot in a blender ( i have one of those small chopper gadgets) skin the sausages and add those and whiz again.
Put the sausage mix into a frying pan and cook over a high heat breaking it up with a wooden spoon. ( I do not add any extra oil). Keep stirring and add the garlic, stir in the balsamic vinegar and tinned tomatoes and herbs. Add some pasta water if you need to slacken it a bit. Once the pasta is cooked so should the sauce.
