Food items that need using up - any ideas please?

Had a declutter on my kitchen cupboards and found a few items that the 'best before' dates were past. Thought I'd try to meal plan them into using up in the next week or so but would love some suggestions, as they haven't been used up already because I never knew what to do with them!
1 sachet Sage and onion stuffing mix BBE Oct 06 :eek:
Approx 200g Seedless raisins BBE May 07
4 Sachets Creamed coconut BBE Feb 07
400g jar Mincemeat BBE Jan 07

I have a bread maker and a slow cooker and quite a well stocked larder/fridge/freezer.

    I'd be getting my baking head on re the mincemeat (mincemeat muffins or mincemeat turnovers if you're a pastry cook!). Ditto raisins, maybe a traybake that could be cut into portions and frozen. Bring it out as you want it.

    I love pork chops cooked in the oven topped with sage & onion stuffing.
    If you're really clever you could probably cook them all at the same time!

    Not really into coconut cream, I've got a block in my cupboard I don't know what to do with either! Coconut rice pud maybe?

    Coconut cream makes a lovely base for thai soups. Heat some stock, thai-ish seasonings (I have some Thai curry powder from Tesco), veggies, cooked meats. Simmer for a bit. Dissolve some of the coconut cream into a paste with hot water and stir in. Simmer a bit more. Tasty with noodles.

    The raisins are still in date for another day! They don't need using yet ;)

    Edit: oooooh. You could put the raisins and coconut into rice pudding. That'd be yummy.

    Hiya Well with the raisins you could make meatballs,not sure on exact measurements but here goes..
    get some fresh mince(or defrost frozen),mix with the raisins adding seasoning and shape into balls,gently fry them then,get a can of oxtail soup put in a casserole dish an put meatballs in,cook in the oven on a low heat(spz cant remember how long for)prob bout 1 hour.

    Coconut milk & raisans can be added to curry for a tasty dish. Sage & onion stuffing is nice with toad-in-the-whole & veggies.

    The only thing I can think of doing with the mincemeat is make mince pies! Mincemeat lasts forever though - I'm sure you could save it until Christmas ;)

    This is how I use coconut in a curry - fry onions and peppers till really soft, add curry powder/paste, chicken/chick peas/more veg, then a sachet of coconut with the fatty bit removed first and enough water to cover. Simmer until cooked and yummy.

    I made a pseudo !"Carribean " chicken dish the other night - basically a chicken and tinned tomato casserole but with thyme, chilli and creamed coconut added -went down very well.
    Mince pies don't have to be just for Christmas!! or you could make a mincemeat flan with a lattice pastry top.
    Stuffing we would eat with any roast or you can make it into little balls and as someone else said put them into toad in the hole to make it go a bit further

  • If you mix the creamed coconut with boiling water to make a coconut milk-ish type thing (I usually use dried coconut milk powder but i'm sure this will work!) you can use it as a base for a very easy very yummy meal I love - Thai Satay Noodles...

    Ingredients (to make approx 3-4 portions)
    • any veg - I tend to use onions, courgettes, leeks, babycorn peppers etc but you can use anything basically - you might want to add chicken too
    • 100ml hot vegetable stock
    • 100ml hot coconut milk
    • 3tbsp peanut butter
    • 3tbsp sweet chilli sauce - I use linghams
    • 2tbsp light soy sauce
    • noodles
    • couple of handfuls of peanuts

    Method
    1. Mix together stock, coconut milk, peanut butter, chilli sauce, soy sauce and give a good stir
    2. Put the noodles on to boil
    3. stir fry whichever veg you've chosen - to stretch it further you can put in a tin or two of pulses if you like
    4. Once veg is cooked add satay sauce and heat through
    5. Poor veg & satay over drained noodles and sprinkle with a few peanuts
    6. Enjoy - it is yummy and tastes luxorious!

    For the raisins how about bread and butter pudding, this would help to use up any stale bread.
    Creamed coconut I would use in a curry,
    Sage and onion stuffing I love this in sandwiches or with a roast.

    I use sage an onion stuffing (after adding the water as directed) mixed in with mince to make meatballs or burgers. Helps them stick together and adds extra spices etc easily ;)
