Lots of interesting recipes for cucs,
I quite like peeling off the skin ,use potato peeler to make strips add a little sugar and wine vinegar keep in plastic box in fridge ,
They pickle very well with cauliflower onion carrot.
A nice Indian raita.
Chopped with tomato onion and creme fraiche .
