Don't add more yeast and sugar in the hope it will become more alcoholic. It will, but it will taste horrible, give you the worst hangover in the world and turn to vinegar very quickly :rotfl:The Hugh recipe is fine, ready after 3 weeks, keeps over a year in plastic lemonade bottles. Never had one explode yet but I do release gas from the bottles every day for the first few weeks.

I have a decorative elder which has pink flowers and chocolate leaves. Is this okay to make elderflower champagne and cordial out of? I have started making the champagne but don't want to poison the family. Thanks

Sounds like mine (Black Beauty ). I've made cordial before and I'm still here. In fact I shared it round a lot of people and they are all fine too.
