    Well finally sorted out and will be having:

    Mon - chicken in black bean sauce with rice - have eaten
    Tue - Pork casserole with mash (using a packet mix)
    Wed - Veggie chilli with rice - got out of freezer and it's not veggie, it's chilli mince & veg with chickpeas. Have decided to serve it with pasta.
    Thurs - Cumberland sausages, mash & veg
    Fri - Fish pasta bake.

    Will need to sort out next month's meals later this week and DH gets paid next week.

    Could i pinch the above highlighted recipes off you please, if it's not too much trouble. I am on SW too, but been off plan more than on lately, partly due to finances and other events! Tia

    Hi, the proscuitto one isn't SW!! But it's easy and lovely....

    for 4

    Cook 350g pasta (spaghetti or linguini) and drain.

    In a jug mix 2 tablespoons each of fresh basil, chopped fresh parsley (though I have missed this one out before), olive oil and one tablespoon each of lemon juice and balsamic vinegar. (increase thes if you want more sauce).

    Heat small amount of oil in a wok or frying pan and stir fry 60g of parma/proscuitto (proscuitto is cheaper usually) with 2 cloves crushed garlic, until crisp. Remove from pan.

    Add 8 medium egg tomatoes (or basic tomatoes in our case!!) quartered and stir fry till just soft.

    Add pasta, proscuitto, basil mix and 40g of toasted pine nuts. Stir fry till hot.


    Not very moneysaving.....:o:o


    Anyway SW Hoppin John is much more thrifty:

    Fry 1 large chopped onion in frylight for 5 mins stirring often. Add 2red 2yellow peppers deseeded and finely chopped, and 2 finely chopped garlic cloves. Cook for 4-5 minutes stirring occasionally.

    Stir in 2 cans black eye beans (or whatever beans you have) and 250g dried long grain rice. Add 600ml hot veg stock. Season. Bring to boil then cover and simmer for 15 mins or until rice is tender.Add 1.5 teaspoon red wine vinegar and 2 tsp hot pepper sauce and toss.
    Serve.
