Ferries. All I get is £90 or £400. Vehicle? Dover or Poole?

I need to batter down this price.

I can't book in advance because I'm on call with my job.

I'd like to go Plymouth-Rosscoff (friends in Plymouth), drive along the coast and come back Cherbourg-Poole so I can carry on the trip to East Anglia.

Unfortunately the best price I ever find online is about £400.

I searched for the prices from Dover (the shortest route) but the best I could get there was £90.

Is it better to go Eurotunnel if short notice? If so I have to drive all the way through France to get to Brittany, and that would cost me 2 days travel.

Finally, I will be buying a new vehicle that I hope to be big enough to sleep in to save money. But of course, there's no point doing this if the crossing is even more expensive. What to choose? Apparently lot of France carparks now have height restrictions so I am considering a low roof but long wheel base VW t4 to be my only vehicle.

Compare this all with walking down to the port in Plymouth and getting on there and then for £30 instead of £60 booked on the web. So the prices online seem to be expensive so it's hard to gauge costs. What if I try just turning up? When just turning up are savings less likely on the Plymouth or Poole route, or is the safest bet to go Dover?

I find this a pain in the neck. I thought it would be easy to just drive to Brittany for a week or 2.
Order of events: Banks lose our money -> get bailed out -> were inflating GBP to cover it -> now taxing us -> next will grab your funds direct -> things get really desperate to balance the books. What should have happened?: banks go bust and we lost our money much quicker
