Will be interested to see if the OP was OK.
I wonder how long ago they booked, why they haven't thought of it until the day before their flight, and why they didn't contact Ryanair earlier.

I have a double barrelled name, so get this a lot and it is a real pain. As has been mentioned, I either leave the hyphen out and enter the two bits as one, or leave a space, depending on what the website will accept. For most things it doesn't really matter, but am always careful with stuff like insurance, travel tickets, etc. Our flight tickets for this year have shown the hyphen, but last year they didn't. I did, however, contact the airline beforehand and got them to confirm in writing it would be OK, just in case.0
