Have a look at the opening times for your local store and it'll tell you. Mine opens at 5am0 -

We have a Home store that only sells furniture only, but they too are opening at 5am.
Whats the etiquette on the sale day? Do I pull the tags off the sofa I want and take them to the till? Im concerned that whilst trying to hail a member of staff over, someone else will rock up and try to call shotgun!!0 -

If the sofas are made in a select number of fabrics... then do they appear online for purchase? Surely there are a hundred or so sofas in a warehouse somewhere!0

I'd be more tempted to grab the cushions off it if possible or take someone to lie on it while you purchase it.
