Spain’s Mediterranean coast - How far south for sun in mid-September?

Stayed at the Hosteria Del Mar a while back. Lovely hotel just across the road from the beach. Undercover parking as well. If you do visit Pensicola you must visit the old town.0

We’ll certainly explore the old town if we go Peniscola!
And stay at the Hosteria del Mar if we can.
Is its food good? Should we dine in its restaurant or eat elsewhere?
(Asking that to determine whether, in advance, it's wiser to book Half-Board or Room Only, there.)
ViaMichelin puts Peniscola at 400 miles, 8hrs 10min, from Santander driving directly (via Zaragoza). Certainly viable in a day and feasible within the realistic limitations of a two week break. It compares well with the mileages and road times quoted for other destinations further north in my original posting.
Santander to Zaragoza looks straightforward by motorway. The fiddly bit appears to be the road(s) from Zaragoza to Peniscola.
One possibility we’re considering is driving up (or down) the coast between Peniscola and Llafranc, with three or four days in each and a couple of days somewhere in the Cap de Salou or Cambrils-del-Mar region, on the way.
(Barcelona is great but it isn’t a place to visit by car!)
Another possibility we’re investigating is the 5-Night Card deal offered by Paradores at € 540 for two people, but I suspect not many of them would have eligible availability in September.

I wouldn't fancy an 8 hour drive straight off a ferry - mind you we're all different. another possibility for a stop off destination is Sitges, just south of Barcelona. I have not stayed there myself but it's supposed to be lovely. Also Tarragona as an overnight stopoff as it is steeped in history.0
