We've got ourselves in a pickle and got no money what so ever until next week Tuesday. I've done a stock take on all the food in the house and got to make sure I can feed 2 adults and 3 children (10,9 &5). Lunch for the children and dinner for the 5 of us. Got cereals and milk for breakfast.
I've tried for the last hr or so to get my head around it but cant make enough meals and I'm not good at experimenting. Hubby is a meat and chips every day kid of man but has reluctantly agreed to eat what ever I make just so we can get back on track. Any help would be most grateful.
Fridge
200g mushrooms (needs to be used asap)
300g cheese
400g carrots
4 beetroots (in a packet)
Freezer
12 bacon slices
8 beef burgers
1 spicy mexican burger
25 fish fingers
18 chicken nuggets
3 chicken burgers
6 white fish fillets
peas
Cupboard
10 potatoes (needs to be used asap)
2 large onions
2 cream of chicken/mushroom soup
1 tomato soup
1 lentil soup
4 tins of chopped tomatoes
1 baked beans
2 spaghetti hoops
3 tins of kidney beans
3 tins of hot dogs ( not very nice ones)
2 tins of mushy peas
2 chicken flavored rice
2 curry flavored rice
1 beef flavored rice
2 pasta n' sauce cheese/broccoli
3 super noodles BBQ beef
dry pasta
I got plenty of spices/ketchup, different vinegars etc

Hi
I'm sure someone will pop by soon who is very good at this. The one thing I can suggest is to chop the mushrooms up and freeze. I do this so not to waste. I just pop them in my cooking frozen. At least you can then use over a few meals and not waste them.
Maybe for the burgers or hotdogs you could make a tomato based sauce for pasta and add them for a little meat?
A veggie chilli using the kidney beans on a jacket potato?
Soups as a sauce for pasta bake?MFW.....Apr 33 Aim - Dec 260 -
Thanks, that is fab
I didn't know mushrooms could be frozen x

I think you could also freeze mash but not 100% sure.
I have read of twice baked potatoes - you bake scoop out much mix the potato with milk and put back in the skin and freeze. Never tried it but I have read somewhere.
Could you make a fish pie with the fish fillets? Or bread in stale breadcrumbs with the mushy peas?MFW.....Apr 33 Aim - Dec 260 -
try making jacket potatoes or oven chip wedges with the potatoes.
pasta can be cooked and eaten hot or cold with a little crispy grilled bacon.
grated cheese and grated carrot make a decent sandwich or jacket potato fillingg.
1 tin tomatoes 1 tin kidney beans some chopped fried onion, boil together serve with rice.
Do you have any herbs?0 -
Chop one of the tins of hotdogs fairly finely, and add them to a tin of toms and kidney beans to make a chilli?
Chop up a few chicken nuggets, and throw them and some mushrooms into a pasta bake, using the soup as a sauce?
Fish fingers, beans and HM chips for the kids on a couple of days?
Again, chop the hot dogs and fry them off in some herbs or spices, and stir them through the noodles or pasta in sauce.
Tell the kids it is a challenge to use up everything! They'll be happy to eat all manner of weird concoctions. Some days, it's just not worth chewing through the leather straps....

Thank you all so far x
I've had a search on internet as well for ideas and found something called below the line budget recipes, gonna try making these veggi burgers with some of my ingredients. http://agirlcalledjack.com/2013/04/06/carrot-cumin-kidney-bean-burger-9p/
Still trying to figure out what to do with my flavored rice. No one really likes them straight from a packet. In the past I have mixed them with fried mince and stuffed them with peppers but I got non of them ingredients at home...0 -
Steam one of the fish fillets, mix with the curry rice for a sort of kedgeree. Make a sausage casserole with the hot dogs tomatos and beans.I Believe in saving money!!!:T

You need 7 dinners for 5 and 7 lunches for 3 (children)
Tea ideas
Pasta bolognese and chilli ( 2 meals)
8 beef burgers
1 onion
2 tins of tomatoes
1 tin kidney beans ( could add)
1/2 stock cubes (if you have them)
1 tsp mixes herds/ oregano or similar (if you have them.
100g mushrooms
Defrost the beef burgers
Fry the onion in a little oil, add the beef burgers crumbled up and fry till meat is cooked.
Add tomatoes, herbs, stock cude, kidney beans ( if you want), vegetables and cook for 15 mins
Serve with pasta
This could be turned into a chilli if you have chilli powder but would need to be served with rice ( but you could use the flavoured rice e.g. beef/ curry and just rinse the rice to get rid of the flavouring) it makes the kidney beans useful. With 2 tins of tomatoes you could easily divide into 2 and have spag bol one night and chilli the other.
Fish fingers, wedges and mushy peas X 2
Cut 5 potatoes into wedge shapes, brush with a little oil (if you have it, and put in the oven at 180'c for 40 minutes turning them half way through.
Cook 12 fish fingers (2 per child, 3 per adult)
Heat mushy peas and serve
Chicken nuggets, chicken flavoured rice and carrots
I think this one is easy enough to interpret.
Stir fry
1/2 onion
couple of carrots
100g mushrooms
3 chicken burgers
2/3 packs of beef super noodles
If you have a little soy sauce you could add it.
Cook the chicken burgers
Fry the onion and other veg and add the chicken burgers cut into strips, Add soy sauce to taste.
Serve with the super noodles
Bacon and pasta bake
Fry off the bacon and cook the 2 packs of pasta and sauce, cut up the bacon and add. You could put it in an oven proof dish and sprinkle on a little cheese and grill it. Serve.
other ideas
Fish pie
you would need potatoes to make mash
1/2 onion (left over from the stir fry)
Fry the onion and add the fish portion and mushroom soup (probably would not need the whole of the tin) simmer for 10 minutes and pour into an oven proof dish, cover with mashed potato sprinkle with cheese, bake in the oven for 20- 30minutes at 180'c gas mark 4. Serve with peas
Or fish morney
You would need 1/2 pint of milk, 1tbsp plain flour (25g) 1 thsp margarine or butter (25g)
100g cheese
Fish fillets.
Make a cheese sauce by melting the margarine in a saucepan add the flour and mix and add the milk slowly stiring all the time till the sauce thickens, add the cheese. Take off the heat
Put the fish in am oven proof dish and pour over the cheese sauce and bake in the oven at 180#c or gas mark 4 for 25 minutes. This could be severed instrad of the fish fingersw and then you could have the pototo wedges with this.
Lunch ideas
That leaves the soup, but you would need bread to serve this with but you could easily have 3/4 lunches of soup
Baked beans/ spaghetti hoops on toast (again you would need a loaf of bread ) his again could do 2/3 lunches
You still have the curry and beef flavoured rice ( if not used for the chilli)
Cheese on toast ( would need bread)
Cheese and beans on toast
Hot dogs could be used if you bought a few more potatoes and cooked them with the baked beans or spaghetti hoops. E.G jacket potato with hotdogs on beans or spaghetti hoops.
You would need a loaf of bread and maybe a few more potatoes but it is posssible.
Good luck.0 -
