    ooo thank you all, love the idea of choco banana lollies :D will have a look through all the links and use them up, didn't know I could freeze them so worst case senario, into the freezer they go for another banoffee pie :D:D

    banana cake?

    You need ripe bananas, eggs, brown sugar (demerara would do) flour and sultanas.

    My recipe is imperial - sorry

    for 1lb 3oz bananas (peeled) approx use 2 eggs, beaten, 6 oz sugar, 4oz sultanas and 8 oz flour.

    mash bananas, stir in beaten eggs then sugar and sultanas. Finally add four, place in a lined 2lb loaf tin, bake for 1-and-3/4 hours at gas mark 4 (180 degrees C)

    Allow to cool and store in an airtight tine for 24 hours before servinge. can be frozen, I preslice to freeze then use for lunchboxes.

    For three bananas I would halve all other ingredients, use a 1lb loaf tin and check after an hour of cooking. This cake is not an 'exact' one - you can use fewer or more bananas if you like - have done it with less then that weight! Mash the bananas very well first, after that it's easy. I now just add the eggs to the mix and beat them in, for instance, before adding flour and sultanas. If I was using Demerara sugar I would mix the sugar in and allow to dissolve a bit in the egg/banana mix before adding the flour.
