    Did you see the readings on their thermometer?

    A shot in the dark, but could it possibly be that your old oven was hotter than the setting it was showing? I bake, a lot, but don't have any recipes, old or new that bake as low as 140/160, everything I bake is between 180 - 200.

    Hi Peachy, thanks for the reply. No I wasn't shown the actual thermometer readings and I didn't think to ask. I was shown the temperatures he had written on his report. I have baked cakes both for myself and others for many many years now and I have never cooked them at a temperature higher than 160C , I find its particularly important when baking cakes such as rich fruit cakes, ie xmas cakes or "celebration cakes" which need to be cooked longer at a lower temperature to get them a nice dark colour and also makes them more moist, so these are usually cooked at 140C. Cakes such as cupcakes and Victoria sponges are usually cooked at 160C, this means they are much more moist and evenly cooked. My chocolate cakes are "famous" here where I live, and I get loads of requests for them.....have to add, I don't like choc cakes!! lol
