Need to make a complaint to tesco

Less than an hour ago I bought ready to eat chicken from tesco. Started eating it and then realised that it was actually still frozen, it was in the fridge section with the other cooked meats. It was something that was meant to be eaten straight from the packet.
No one in tonight that I could make a complaint to, was initially told to go and pick another one which I refused (chances are they are all partly frozen) and then a refund. Not really satisfied with the refund option, especially as that was only offered when I refused another pack.
Manager would not come and speak to me.
Staff member wrote on my receipt stating the issue which was also signed by manager so that I can make a complaint. Problem is I'm working from 8am-10pm tomorrow which obviously means I can't get to the store, also can't make any phonecalls during that time and don't get breaks. I was told that Sunday would be too late to make a complaint but what else am I meant to do?

Something a bit more than 'go and get another one off the shelf'. I had one that was frozen, why would I want to risk picking up another one.
Went in there looking for a refund, they initially refused that because apparently they didn't have anyone that could do that for me. Funny how that changed when I said I would make a complaint.

Could it just be that the fridge was too cold and caused some parts to freeze rather than you've got raw frozen chicken?0

They've already offered you a refund. What more do you want?? Mistakes happen!
Actually, Tesco customer service is usually fabulous compared to other supermarkets.
