Converting back to MP3 files from the ITUNES one.

Hope someone can help, this is frustrating me!
I've used ITUNES for years, and have about 80G of songs on it (lots from CD's, Amazon, etc), but all coverted into ITUNES.
I was using an IPOD, connected to my car audio system, and it worked really well, displayed well on audio screen, etc.
Unfortunately, a bottle of antifreeze leaked near it, and it's now completely had its chips.
So, I thought, rather than go to that expense, I'd get a 64G stick, and put that into the system instead.
I converted what I needed onto the stick, and realized that some of it won't play or even display.
Reading more into it, my car audio system will only play MP3's, and ITUNES, kindly, had changed everything to a different file format, which it won't play.
I've noticed that ITUNES had a converter, to put things into MP3, but I've so much in the wrong format, and it's so flakey, it wants a yes or no every so often - that would take me years to complete it!
So,
1) Can anyone think of a better way?
2) Do you think the Amazon cloud could help me out of this? I have the premium one free, so most of my music is on there...
