I think you can top up in multiples of £5 if you use the machines, but you can put on any amount you like at the ticket office. Here's a link to the Transport for London fares guide, so you can work out in advance how much you're likely to spend:

The maximum you'll pay for a PAYG Oystercard is 50p less than the equivalent 1 day Travelcard. So how much you need depends on which zones you travel - for most tourists that means zones 1-2 fr which a 1 day off peak card is £5.10.

Even if you overpay you can get a refund

I`m pretty sure that you need an oyster card each. Last time I was in London, a couple tried to use the same card on the same bus, but it didn`t work and the driver made them pay.

Yes you need an oyster card each if you are travelling at the same time - otherwise it wouldn't work at the barriers (EG you tap it on the barriers at king's cross, then your wife does, hm the oystercard won't know what to make of it!) Actually I think it will just beep at you and not open and the guy by the barriers will tell you you can't do it :-(

If the child is under 11 they are free with a fare-paying adult, but you would need 3 oyster cards for the 3 adults, sorry. You could get some more at the ticket office in Stanmore.
