Projected finances on business plans

I'm in the process of completing a business plan, in the hope that I will be accepted onto the NEA, and have it all done, apart from the projected finances. My mentor is on holiday just now, and I would really like to get it all completed for her return later this week.
As I am a bookkeeper, the actual completion of projected cash flows etc holds no traumas for me, other than trying to decide how to project my income. Is it worth doing a "worst case scenario" (ie, I already have secured 2 clients, so worst case scenario would be that they are the only clients I manage to get this year), then a "best case scenario", with a projection of several clients of varying hours.
And should I include an "affordability" study, including other income, like maintenance payments and child benefit and all my household outgoings?
