Help me with my fish pie

I make my fish pie by part frying onions then adding milk, smoked haddock and white fish. I usually bung in some herbs and spices; pepper, cumin, paprika. I add cornflour to thicken and put in veg and prawns, top with mash and cheese.
It tastes all right but is lacking some oomph to it. Any suggestions as to what I can add to make it a bit more flavoursome?

I used a Mary Berry recipe to make a fish pie this week and to her white sauce she added the juice of 1 lemon just before adding potato topping. I thought it worked well and certainly gave it a zing. Proof was in the eating and I had 4 empty plates after the meal
. One of them was from a fussy teenager who doesn't normally do fish! :j DEBT FREE FROM 01/01/11 :j

I use the Jamie Oliver recipe - no white sauce, bung everything in raw so dead easy. It has chilli and lemon, so is quite zingy! My 2 DD's always say its their favourite fish pie ever!
It's online, so easy to google.0 -
If you want a fish pie with "oomph", use kippers. If you fold it in half, will an Audi A4 fit in a Citroen C5?

I use Nigella's Blakean Fish Pie recipe - poaching the pieces of fish first in white wine with lemon & bay leaves, then use the poaching liquid to make the white sauce with saffron.
That seems to give it enough flavour;)0 -
Add tarragon to your sauce and a tsp of english mustard to the mash. Brush your mash with egg wash before baking, it makes it lovely and crispy. A few prawns or some smoked salmon trimming and don't forget salt and freshly ground pepper.0
