Lemon zest - healthy eating

On the internet .... I came across people drinking lemon juice each morning. I came across Bergamo oranges (a sort of hybrid said to be extending life in southern Italy). I came across anti-carcanogenic claims for Bergamo oranges. I came across earl grey tea which uses Bergamo oranges. I came across counter claims re cancer, ... but what they all seemed to agree on is that most of the vitamin C is in the skin of lemons. I was fed up of juicing my lemons and throwing so much away. I came across an idea, freeze the lemons & grate them. I now do. A lemon now provides me several days worth to go with a spoon of honey. But I now do it with Limes & Oranges & you can make fantastic cheesecakes and add to rice ... and what haven't I found yet?:)
