Looks like we've found a car with quite specific tyre requirements, and since OP says he does use it heavily loaded, he needs to find a tyre that can take it.
Skoda will probably come back and tell you to fit the brand and model that it came out of the factory with, this will be the most expensive I guess, but also safest. Anything else, and I'm sure Skoda won't help.

Does anyone actually change their tyre pressures depending on how many passengers they are carrying? Never have myself.

I will add 2 to 4 psi if heavily loaded and/or towing

I sometimes add an extra 20 PSI to front and rear curb side if I have to ferry my sister-in-law around

I think it's more that someone who is regularly ferrying around 4 people would want to consider using the higher pressure, as would someone who is regularly hauling around sacks of cement or whatever for their trade.

I've decided what tyres I'm buying and am just deciding which fitting centre to use before placing an order with Blackcircles. I have not checked with Skoda and do not intend to as I see no reason why I should. The tyres are the exact same spec that were on the car when I bought it from them. I don't want Skoda trying to dictate my tyre choice on the basis of whatever agreements they may have with tyre manufacturers. This is not some exotic car, it's a bog standard Octavia!

As for actually using the high rear inflation pressure it would be a rare occasion when I might, but I do feel that I ought to have tyres capable of doing this. That way if I do say end up transporting a car full of concrete paving slabs I can up the pressure accordingly. I'm not going to start messing about with tyre pressures every time I give a couple of people a lift or anything like that though!

Have I always increased tyre pressures when carrying heavy loads in the past? Hell no! There were many occasions in my early twenties when I carried all of my possessions about in a crammed to bursting Metro, and not once did it even occur to me that I should consider upping the tyre pressures. Given how extreme the difference is on my current car I would be slightly more inclined to do this now though...

Your reasoning makes sense, and I like your honesty. We all did dumb stuff in our teens and twenties but few will admit it.

Good luck moving your paving slabs :)

Here is an experiment some Americans did, it will no doubt get the "think about the children brigade" moaning.

Overinflated (or under inflated) tyres wear out faster, so as well as being unsafe you'll need to be replacing them a lot sooner, which will probably wipe out your fuel savings in doing that.

Stick to the recommended pressures provided by the manufacturer.

Even if your reasoning is "think of the CO2." You'd need to take into account the cost of making and disposing of tyres."

Interesting little test. But not one that's about to make me hyperinflate my tyres.
