I am thinking of booking a night at the Manchester Central Premier Inn and will have the car, there is no parking at the premier inn looking for suggestions for parking, will be arriving after lunch and leaving mid morning on the next day.

Hi, there's parking at The Lowry Hotel on Chapel St (very central) at about £8ish for 24 hours.
There is also Boddington's car park opposite the MEN arena. Again central, £3 all day and £6 for 24 hours.
From both you could walk into the centre/Deansgate/Market St in a couple of minutes.
I would use either of those, some of the NCPs and city centre car parks are absolutely ridiculous- £13 for 6 hours!0
