Goat curry does actually look really easy from this recipe http://www.jamaicatravelandculture.com/food_and_drink/curried_goat.htm but goat isn't something I have ever eaten, wouldn't know where to even buy it so would probably have to use a different meat.
I did Jerk Chicken with a Mango salsa in tortilla wraps last night, it was lovely!! Might try it with Coco or hardo bread next time after seeing the recipe.One day I might be more organised...........

Hi, Good luck with the cooking. The thing about carribean cooking is it varies so much, from island to island and there is always someone who will tell you how to do it differently.
Curried goat isn't that hard, as mentioned earlier it takes years to cook. Here is a thread about it from earlier in the year http://forums.moneysavingexpert.com/showthread.html?t=379266&highlight=curry+goat
You can get goat from indian butchers.
Also try making rice and peas with black eye peas and add bacon ribs to the rice while cooking they taste divine.
Before you start carribean cooking you need to get a some spices. I'm lazy so I just get the Rajah seasoning mixes. They have one for everything, jerk, fish, chicken, beef etc. This is the easy way to get an authentic taste.
A simple dish to do is fried fish. Buy fish (mullet, snapper, mackerel all work well) and season with fish seasoning. Try and leave overnight or at least for a couple of hours. Then fry the fish in hot oil until crispy. You can make a garnish of peppers and onions by gently frying sliced peppers and onions in butter until soft then adding some white vinegar. Serve this with salad and fried dumplings / bakes.
Fried dumplings / bakes are lovely, can be served with pretty much everything and are fabulous if you run out of bread. You get some self raising flour, water and a pinch of salt and a drop of oil and mix together to form a dough. Try and get as much water into the dough as possible withough it being sticky. It should be like bread dough. Then break off small pieces and roll into balls. Deep fry until golden. They look like bread when opened up.

Chika, i have the fussiest man alive!! he hates the indian spices only the caribbean spices, quite frankly i think he's just being awkward.
Thanks for the recipe for dumplings, i looove those but never had a clue on how to make them.......silly i know, as they are a simple dish.0 -
Also whats very difficult here is we only have eastern european and indian supermarkets apart from the usual tesco, sainsburys etc so i have to rely on them im afraid.
Went to the butcher and enquired about goat, he looked at me as if i had just asked him to perform a ritual......very bazarre, anyhow he cant just order in what i require and b/friend doesnt like the alternative (mutton) so may have to miss the curried goat.0 -

Trust me I know all about those awkward Caribbean men...
A lot of them (not all) have been spoiled by their mothers and know what they like to eat but ask them to cook it and that is a different story.
So if he keeps going on about the goat, tell him to get hold of some and you will cook it!
Re the spices,if you hide the bottle, he won't know whether it is Indian or what!
It's all well and good trying to impress, but if you try too hard, you might find yourself in trouble.
My husband used to insist on eating rice and peas almost every single day in his mother's house. Now, he is lucky if he gets it once a month!!!!!!Newbie Debt Ninja0 -

Just in case this is handy for anyone else.. Tesco near me has a carribean section and they have 'Tropical Sun' spices 100g for 89p on buy one get one free at the moment (but only until 29th May). I also got some Tropical Sun hot pepper sauce and some Encona West Indian hot papaya sauce (never had this before, just tried a little bit and it's very tangy and hot, yum!) which were also about 89p each. The tubs of spices have a couple of recipes on the side - I got fish seasoning which has a recipe for roast red snapper, and all purpose seasoning which has a recipe for Callaloo soup.Debt@16.12.09 £10,362.38, now debt free as of 29.02.2012."I cannot make my days longer so I strive to make them better."0
