who should be policyholder

OH and I have a multi-car policy through Aviva. I own one of the cars, my OH owns the other two - our insurance covers us both to drive all three. I called them, arranged all the cover, negotiated the price, made the decision to buy, and used my credit card to pay the premium. But when the documents arrived, the policyholder was named as my husband, not me. When I rang a couple of months later, to make a change on the policy, they wouldn't talk to me, as I wasn't the policyholder. At no point was I asked who I wanted the policyholder to be.
My question is this - what is the legal position here? Surely they can't just arbitrarily change the person with whom they have a contract? It was reasonable of me to assume that, if I gave all the information, and paid the money, the contract would be with me. If they were going to choose a different person, they should have asked me?

No longer a spouse, or trailing, but MSE won't allow me to change my username...
