I find you don't need to really measure with this recipe, it is that easy and forgiving!
I melt a 'blob' (around a level tablespoon if you need a visual measure) of butter/buttery stuff in a big pot, pour in a large bag of marshmallows and stir on a low to medium heat until it's mostly melted. A few partly melted marshmallows is nice as you get pockets of pure marshmallow.
Stir in your rice crispies (basics / value ones are ok) and any other additions (raisins, choc etc) until you can't get any more in. Depending on the quantity of marshmallows, you may well need most of a bag of crispies.
Turn out into a greased and/or lined dish and leave to set. Cut into squares when cold.
You can press chocolate decorations on top before it sets, or drizzle chocolate over the top - the limit is your imagination!
If I'm taking these somewhere, I will use a disposable foil tray to turn it into to set, makes it easy to transport and you don't have to carry the container back. Depending on where you're going, either cut into squares before leaving, or for more rigidity while travelling, cut once you arrive.
Exactly how we make them too. The silicone baking 'tins' are really good for these. Just lightly oil the inside then when they're almost set, slice up and they can be easily pried out. Hmmm, might make these at the weekend. Sometimes it can be hard finding marshmallows though. Anyone else had that problem? Empty marshmallow shelves in Mr T's?0 -
