Help with Ipod please.

Morning all, I hope that some clever person out there can help me? I have bought my husband a second hand ipod and am trying to load 'his' music onto it as a surprise. When I connect it to my computer it is comming up as guest, I have opted to link it to my itunes account with no problem. I have checked the box which says to manage music manually, however I don't seem to be able to control what goes onto it?? It keeps automatically loading music!
So my question is how do I stop it from doing this and just drag the music I want on there to it??

I use this as hate Itunes.

Uncheck the default setting, which is to synch to iTunes automatically.No free lunch, and no free laptop
